President  Nixon was in the White House and the Happy Cakes was a hot seller in the Sears Roebuck catalog!

 

Hawaii’s most famous cake began in 1967 in Wahiawa, Hawaii as a dessert at the renowned Kemo’o Farms restaurant.  With its reputation for outstanding food including lake trout, and unrivalled local music with stars such as Charles K.L. Davis on the piano, Kemo’o Farms was the place to go to.  Every North Shore journey would include a stop at Kemo’o Farms for great food.   Dick Rodby, the long time owner of Kemo’o Farms surrounded by pineapple fields in the center of the island, decided to add a pineapple macadamia nut cake called the Happy Cake to his menu.

 

The Happy Cake was a hit!  Dick’s customers loved it and within a year or two, he had developed an army of local followers who would drive the twenty mile journey from Honolulu during December with the hope of getting a Happy Cake for the holidays! 

 

Five years later, the Happy Cake was featured in the famous Sears Roebuck catalog.  As many of you remember back then, so much of the retail shopping experience was done through catalogs.   Sears brought the Happy Cake to America!    Every state, no matter how cold, or how far away from the Islands could now enjoy the warmth and flavors of Hawaii!  Pineapple, Macadamia Nuts and Coconut! 

 

Now forty eight years have passed since those first Happy Cakes were served and we wanted to share some of our warm history with you!  Happy Cakes have remained true to Dick Rodby’s legacy as one of the top restaurateurs on Oahu!
